(Del Rey At Villa Royale named a top U.S. hotel bar by Tales of the Cocktail Foundation)

Del Rey, the speakeasy bar and intimate restaurant at Villa Royale, the 37-room historic hideaway in Palm Springs’ Deepwell neighborhood, has launched new lunch and dinner menus created by local celebrity chef Gabriel Woo.

The restaurant retains it Mediterranean-style tapas offerings executed by chef Alex Lopez including additions such as charcutería with Angels Black Truffle Salami, Nduja, Jamón Serrano 17mo, Mahon, Señorio Vaca Añeja, Manteqilla de Murcia Olives, Marcona Almond, and Fig Jam, and conservas (tinned fish) in a variety of imported and domestic fish and pulpo, including selections from Fishwife Tinned Seafood Co. Pollo Rostit, Bistec A Las Brasas, and Salmon al Papillote are offered as larger plates.

Lunch and poolside offerings feature the resort’s signature Royale Burger & Fries with mahón, roasted peppers and crispy onion, Grilled Jamón y Queso with Jamón Serrano, and seasonal salads like Ensalada Del Rey with bouquerones.

“Our new and expanded menus enhance Del Rey’s well-earned reputation of featuring authentic tapas in a setting that is uniquely Palm Springs,” says Phillip Conner, Villa Royale general manager. “The conservas menu is one-of-kind featuring a curated, rotating list of domestic and imported tinned fish including sardines, smoked rainbow trout, spiced calamari in a ragout sauce, tuna paté, and wild pulpo.”

Beginning October 12th, Del Rey will launch a weekly paella night offering Chef Alex’s creations of this classic Spanish dish on a prix fixe menu. Reservations will be available starting in early September for these special Thursday dinners.

In addition to the new menu, Del Rey is now serving a hand-crafted and seasonal sangria. Barman Alejandro Bravo has perfected a sangria recipe with housemade cardamon and citrus syrup- great for sipping by the pitcher- and has introduced a new line up of cocktails including the Royale Old Fashioned, a modern and continental take on the classic cocktail with fat-washed whiskey, sherry, and black walnut bitters and served with a snack.

Del Rey is a 2023 top 10 winner of Tales of the Cocktail Foundation’s 17th annual Spirited Awards® for “Best U.S. Hotel Bar” in the west and has been a recommended cocktail and dining destination by The Infatuation, Eater, Forbes, @GastronautaDF, and more.

Villa Royale has been named one of the nine top hotels in Palm Springs by Conde Nast Traveler (2022), a top Palm Springs historic hotel by the Los Angeles Times (2023), a USA Today 10Best Readers’ Choice Best Hotel Bar (2019), and the recipient of accolades from publications including InsideHook, Haute Living, Palm Springs Life, Good Housekeeping, and many others.
