The upscale steakhouse is taking over the former Roy’s restaurant on Highway 111, with management and chef recruitment already underway.
RANCHO MIRAGE, CA
A nationally recognized upscale steakhouse is preparing to open in Rancho Mirage, bringing another luxury dining option to the Coachella Valley.
The Capital Grille has confirmed plans for a restaurant at 71959 Highway 111, the former location of Roy’s Hawaiian Fusion Cuisine.
The company expects to open by spring 2027, according to a September 24 report by Greater Palm Springs Business Insider that quoted a company spokesperson. No exact opening date has been announced but there is a pending liquor license with the California Department of Alcoholic Beverage Control.
The project is moving through construction and hiring. The restaurant’s official careers website lists management and kitchen leadership positions for the Rancho Mirage location. A restaurant manager position posted October 16 identifies the Highway 111 address and advertises an annual salary range of $64,000 to $75,000.
The recruitment confirms that the company is preparing the restaurant, although it does not establish when the business will begin serving customers.
Taking Over a Familiar Location
The new restaurant will occupy the former Roy’s building along Rancho Mirage’s established Highway 111 restaurant corridor.
Plans call for converting the property into a roughly 9,260-square-foot restaurant with approximately 275 seats. The project would bring new activity to a commercial property that has been vacant for several years.
The Capital Grille specializes in dry-aged steaks, seafood, wine and private dining. The company is part of Darden Restaurants, which operates several national restaurant brands.
The Rancho Mirage restaurant would also be a relatively uncommon California expansion for the chain. At the time of the September report, the brand listed only two other California locations, in Costa Mesa and Burbank.
A New Luxury Dining Destination
The restaurant is expected to appeal to residents, visitors and business travelers seeking upscale dining. Its private dining facilities could also serve corporate gatherings, celebrations and other events.
The planned opening comes as Rancho Mirage continues attracting hospitality and restaurant investment. The Highway 111 address places it near established hotels, shopping areas and other dining destinations.
However, the company has not announced a firm opening date, a specific staffing total or a complete menu for Rancho Mirage.
For now, the confirmed project and active recruitment provide evidence that the restaurant is moving toward its projected spring 2027 opening.
